Led by Hideyuki Saito—former head bartender of Gold Bar and a highly accomplished mixologist whose cocktail program ranked in the top three at The World’s 50 Best Bars 2023 Best Cocktail Menu Awards—Driftwood, the bar at Fairmont Tokyo, reflects both experience and refined skill.

The menu at Driftwood, produced by Saito, is inspired by the idea of driftwood carrying flavors from around the world, meeting Japanese tastes, and transforming into new cocktails.Agave spirits and spices travel across the Pacific to meet Kuma shochu from Kumamoto; Vietnamese cacao and tea leaves pair with Oita shochu; Taiwanese tea encounters Aomori cider—all connected across oceans and brought together in the glass.

As the bar’s theme is the sea, each cocktail features salt in a unique way—sometimes on the rim, sometimes infused directly into the drink—subtly enhancing the flavors and sharpening each cocktail’s structure.
