"Journey of Japan": A Liquid Voyage at Peter Bar
"Peter Bar," the signature bar of The Peninsula Tokyo, presents a menu titled "Journey of Japan"—a concept that invites guests to explore the country through the medium of cocktails.
Each creation is rooted in the personal travels of the bartenders. Inspired by the local ingredients and experiences they encountered firsthand, these drinks offer a sensory escape that makes you feel as though you are traveling right alongside the creator. Upon taking your seat, you are presented with a kiri-bako (traditional paulownia wood box). Inside, you will find the menu beautifully displayed alongside a selection of the actual botanicals used in the cocktails.

For these bartenders, life and craft are inextricably linked. Their diverse repertoire is built from meaningful encounters—whether it’s discovering a new botanical during a mountain hike or a chance meeting during their travels.
In Iwate, inspiration struck while trekking through the forest. The team collaborated with the local Kanegasaki Distillery to craft a custom bitter liqueur from forest-foraged ingredients, resulting in the signature "Minori Spritz." Drawing from experiences on the trails of Hakuba, they also created a lush, revitalizing "Trail Bloody Mary" using freshly picked tomatoes and peaches that seem to soak into the body.


The bar is inclusive and welcoming to all, with several menu items available as non-alcoholic "zero-proof" options.
In a charming touch, the individual cocktail cards are detachable. Guests are encouraged to take home their favorite cards as a memento, or even request a signature from the bartender.
